Colombia’s lechona is officially the best dish in the world according to TasteAtlas. In its annual 100 Best Dishes in the World ranking, TasteAtlas has ranked the Colombian lechona as the best dish in the world, outmatching other world-class dishes such as Italy’s Pizza Napolitana or Brazil’s picanha.

2024 was a great year for Colombian gastronomy and lechona in particular. The iconic pork dish earned a global recognition this year, topping several prestigious rankings. After being named Best Pork Dish in the World, the lechona was ranked as the Best Meat Dish in the World in TasteAtlas rankings.

What is Colombia’s lechona, the best dish in the world?

Lechona is a whole roasted pig, deboned and filled with a flavorful stuffing. The stuffing typically includes a mixture of rice, peas, onions, and an assortment of spices. Preparation begins with marinating the pig using seasonings such as garlic, cumin, and achiote, which contribute to the dish’s distinctive taste. After marinating, the pig is stuffed and roasted for hours, resulting in crispy golden skin and a savory interior.

Though lechona is enjoyed throughout Colombia, it is especially linked to the Tolima Department in central Colombia. It frequently appears at festive events like Christmas and New Year celebrations.

Lechona has roots that reach back to pre-colonial times when indigenous communities prepared whole animals for special celebrations. Over centuries, the practice evolved, blending indigenous culinary customs with Spanish influences introduced during colonization. Spanish settlers brought pigs to the region, which became a key ingredient in what is now the iconic lechona, symbolizing a fusion of native and European cooking traditions.

Regional variations of lechona

Lechona Tolimense

Originating from the Tolima region, Lechona Tolimense is perhaps the most recognized version. It is characterized by its spicy flavor, achieved through the use of achiote, which adds a distinctive color and taste to the rice stuffing. The dish typically includes:

  • Rice
  • Peas
  • Pork
  • Creole potatoes

The combination of soft rice and intense spices makes this variant particularly memorable and is often served during festive occasions.

Lechona Huilense

In Huila, Lechona Huilense stands out for its generous filling and larger pieces of pork, giving it a rustic texture. This version often includes:

  • Herbs like guasca for added aroma
  • A more substantial amount of meat compared to other variants

Lechona Huilense celebrates the region’s abundance and is commonly served at family gatherings and celebrations.

Lechona Cuyabra

Popular in Cali, Lechona Cuyabra is known for its sweet and sour flavor profile. Key ingredients include:

  • Pineapple
  • Beer

The addition of pineapple provides a refreshing sweetness, while beer contributes a unique depth of flavor. This variant balances sweet and savory elements beautifully.

Lechona Santandereana

From Santander, this version uses ground chicharrón instead of larger pork pieces, resulting in a crunchy texture. It is typically served with:

  • Peanut sauce

The combination of crunchy chicharrón and creamy peanut sauce creates a delightful contrast that enhances the overall experience.

Lechona Antioqueña

In Antioquia, Lechona Antioqueña features a rich filling that includes:

  • Pork
  • Rice
  • Peas
  • Carrots
  • Peppers

This version is celebrated for its balance of flavors and textures, making it a staple at local festivities and family celebrations.

Lechona Costeña

Found along Colombia’s Caribbean coast, Lechona Costeña incorporates local ingredients like:

  • Green plantain
  • Coconut

These additions provide a tropical twist that reflects the Afro-Colombian culinary influence in the region.
