In southern France, near the city of Montpellier, a vibrant food truck is introducing locals to the richness of Colombian cuisine. Colombian Vibes, founded by Luisa and Christophe, a Colombian–French couple, is more than a street food project; it is a cultural bridge built through flavor, music, and identity.

The origins of Colombian Vibes are deeply personal. She is Colombian, while Christophe is French, a dynamic that naturally shaped the project’s cross-cultural identity. Once settled in the south of France, they quickly identified a gap in the local food scene.

“In France, especially in the south where we live, Colombian food is not very well known. So we wanted to introduce French people to this colorful, flavorful, and generous cuisine,” they told Colombia One.

Although the idea had been developing for some time, the project officially launched around seven months ago. What started as a concept soon became a concrete entrepreneurial venture, rooted in both nostalgia and opportunity.

The choice of a food truck model was strategic. It allowed them to remain flexible, reach different audiences, and bring Colombian cuisine not only to locals but also to Colombians living abroad who long for a taste of home.

Colombian restaurant blends tradition and adaptation in France

At the core of Colombian Vibes is its menu, an offering that stays true to traditional recipes while also embracing subtle adaptations for the French palate. Customers can find iconic Colombian dishes such as ajiaco, posta sudada, patacones, ceviche, and chicharron, alongside sides such as yuca frita and papa criolla. Patacones (fried mashed plantain), for example, can be customized with different toppings such as shredded beef, chicken, shrimp, or chicharron, depending on the customer’s preference.

The food is prepared with a focus on authenticity and quality, using ingredients sourced through professional suppliers who import products directly from Colombia under legal standards.

In addition, the menu features fresh fruit juices made from natural pulps, including tropical Colombian flavors like lulo, guanábana. “People really appreciate that everything is homemade and natural. The sauces, the juices, everything we offer is very authentic,” they note.

At the same time, the founders have introduced creative variations to connect with local tastes. One standout example is their empanadas, which go beyond traditional fillings.

“We usually prepare 100% Colombian dishes such as sancocho or bandeja paisa, but we also adapt some recipes so French customers can discover new flavors like empanadas with goat cheese and honey or chicken with mushrooms,” they add.

Beyond food, Colombian Vibes builds a cultural experience

Colombian Vibes reflects in its name the idea of “people vibrating;” it captures the energy and spirit that the founders associate with Colombian culture. For them, is not just about feeding people, it is about creating an atmosphere: “Colombia is joy, music, and resilience. We wanted to offer something that truly vibrates, that’s why it’s called Colombian Vibes,” they explain.

Music, color, and warmth are essential elements of the brand. Each service is designed to make customers feel welcomed and immersed in Colombian culture, turning meals into broader sensory experiences.

Challenges of the food truck industry in France

Operating a food truck in France comes with its own set of challenges. This sector has grown significantly over the years, making it increasingly competitive.

One of the main obstacles for entrepreneurs is securing strategic locations: The most difficult part is finding a place permitted to operate, visible, and well-located.

Despite this, they describe their experience with French administrative processes as generally positive, emphasizing that organization and compliance are key to operating successfully.

Currently, Colombian Vibes operates in areas around Montpellier, particularly in smaller towns such as Teryan. Additionally, they frequently participate in private events, weddings, baptisms, and corporate gatherings that want a taste of the Colombian Vibe.

Looking ahead: from food truck to brand

The long-term vision for Colombian Vibes goes beyond the food truck. The founders are already working on expanding their brand into new areas. Their goal is to build a recognizable Colombian brand in France, expanding the presence of Colombian culture beyond food.

“We are currently developing our own 100% Colombian coffee brand,” they reveal, pointing to a growing interest in Colombian coffee as a global product. In addition, they hope to open a permanent restaurant, which would allow them to further develop the cultural and aesthetic aspects of the experience.

“In a restaurant, you can create a stronger atmosphere with decoration, music, and more freedom. But we never want to give up the truck because it allows us to bring Colombian Vibes anywhere!” they said.

A growing appreciation for Colombian cuisine

The reception from the public has been overwhelmingly positive. French customers, in particular, have shown curiosity and enthusiasm for discovering new flavors. “People love that the food is generous, natural, and homemade. They also enjoy trying something different.” Christophe said.

The project also serves as an emotional connection point for the couple. Through this Colombian food truck in FranceColombian Vibes, food becomes, more than nourishment, identity, memory, and cultural exchange.
